TGIF Macaroni & Cheese Deluxe!

MACARONI & CHEESE DELUXE

(LOW-FAT & LOW SODIUM)

(Guaranteed to please—rated as scrumptious as regular mac-&-cheese)

4 ounces macaroni, uncooked

1/2 cup sour cream

¼ tsp. salt

4 ounces shredded Colby cheese

1 cup ricotta cheese (or cottage cheese)

1 large egg

Pinch pepper

Pinch paprika

  1.  Cook macaroni according to package directions; drain
  2. Combine ricotta (or cottage cheese), sour cream, lightly beaten egg, salt & pepper in large bowl
  3. Stir in shredded Colby cheese.
  4. Add macaroni, stirring well
  5. Pour mixture into greased baking dish and sprinkle with paprika
  6. Bake for 45 minutes at 350°

Servings:  3   Preparation time:  30 minutes

  1. Oh YUM! One of my favorites – if it’s homemade and not that blue box stuff. Will have to make this for the grandson one of these days – he’s a mac-n-cheese lover also – only he normally wants the blue box stuff. Thanks for sharing this healthier version. 🙂

  3. My 9 year old was looking over my shoulder when I read this post…he is VERY excited to make this sometime this week! Mac and cheese is his absolute favorite, so thanks for sharing this healthier version that I can feel good about letting him eat. My boy loves a mac-and-cheese feast! 🙂

  5. I am amazed at all the different recipes for mac and cheese, our family would live off of mac cheese if I made it every day!! I will have to try this one. Sounds delicious. Never thought to add paprika…or sour cream for that matter, but it is creamy!

    • Thanks, Patty. My husband found this many years ago and is a great recipe. We’re not into boxed meals much. Like to make from scratch. 🙂

      • Chili is great too. I love it homemade also. My kids love it over mashed potatoes. With shredded cheddar cheese. and a dollop of sour cream. and a big spoon! I guess that’s all for now. 🙂

      • ohhh that sounds good over mashed potatoes, I never thought of that – we are having mashed potatoes tomorrow, I will have to make extra to try it with our leftover chili next week. We always put cheddar on our chili it really brings out the flavor. Thanks for the idea.

      • Mashed potatoes were loved by the kids and is was a way to make the chili go farther! And stay filled! With 4 growing kids, I had to extend the food out as far as possible. To this day they make it themselves. And if I’m at a restaurant and don’t see anything I want, I’ll order a bowl of mashed potatoes and a bowl of chili and mix them together! They usually think I’m from the south when I do that! LOL. It’s a good meal anyway, a comfort food. Yes!
