Bette’s Apple-in-a-Bag

My friend, Bette, submitted this delightful apple recipe.  She says it is a perfect late-night snack, and I must say, after trying it, it would make an excellent snack anytime.    Quick and easy and tasty as can be.

Take:

one apple, pared & sliced

1 tsp. sugar, sugar substitute, honey or no sugar at all

1 tsp. water

1/4 tsp. cinnamon

1/4 tsp. cornstarch

1 quart-size zip-lock bag

Put apple slices, sugar, water, cinnamon and cornstarch into zip-lock bag.  Toss a bit and place on paper plate or microwave plate.  Leave a large opening in bag lock for steam to escape.  Set oven on high for 2 minutes and get your fork ready to eat a delicious snack.

  3. I’m not much on recipes but this sounds yummy and I’ll try most anything that requires no muss or fuss. Tom’s always been the cook in our household. This recipe reminded me of one I had for lunch over and over as I could stock pile the ingredients at work. Fix the apple same way, same amount of water, add 1 – 3 t heart healthy margin, 1/4 t nutmeg, no cornstarch. Place in microwave uncovered and cook 2 minutes. I generally cooked mine in a toss away container. If you want to go the extra mile and have a delicious and filling lunch – add a container of your favorite yougart on top of the hot apple plus 1/4 c grapenuts (or other ceral with equal nutrition). This makes a meal per National Diabetes exchange list as well as Weight Watchers.
